We have blackberry bushes that have always given us enough to put on our morning cereal, and last year it produced enough for cereal and a pie, which was delicious. This year, I have so many that we had it on cereal, right off the bush in our hands, made another delicious pie and still have so many that I needed a quick and easy recipe. So, off to Cooks.com I went.
I came up with the quickest thing I saw, Blackberry Cobbler. The recipe is real simple. I'll share so you don't have to look it up. BTW, it doesn't work with blueberries it said.
BLACKBERRY COBBLER
2-2-1/2 cups of blackberries in a bowl washed
1 cup of sugar - add to the blackberries in bowl and let sit for 20 minutes.
Preheat oven to 375 degrees
In another bowl mix 1 cup of flour
1/2 tsp of salt
2 tsp of baking powder
1 cup of milk - mix all of these things together.
Melt 1/2 cup of butter, this is a stick. Once melted pour it into the flour mix. Stir it around a get rid of lumps.
Put the flour/milk mixture in an 8" square pan and then spoon the blackberry/sugar mix over top. Do not grease the pan. Don't need to prep the pan at all. Then just pop it into the oven for 45 - 55 minutes until the dough is golden brown. I had to keep mine in the full 55 minutes. Here is what it looked like when done.
It is so good out of the oven hot, we just put ours in a bowl with a little Reddi-Wip and OMG, it was wonderful.
I'll be making this again!! The recipe says that the prep time was 25 minutes, well doing the time thing I spoke about in the last post, well prep time took me less than 15 minutes, except that I had to wait and let the blackberry and sugar mix sit for 20 minutes. I had all my ingredients ready before I began. It sure does save you time. Just think, if you had to stop to get another ingredient, you probably would have something on your hands that needed washed and then you'd have to dry them, and then get what you need, now you need a different measuring spoon, you get the idea. Be prepared and you can make this dish in no time at all. BTW, it's so good warmed up with ice cream. Enjoy!!!!!

DeleteAt first I didn't read this post - because I love Blackberries and I love cobbler - and I just knew I would want some. Then I thought I'll just read see how hard it would be to make - well, you guess it. I'm going to the store tomorrow (I would go today, but I have a birthday to attend) to buy some blackberries cause this is just too easy (and look how yummy it looks!!) I can't wait.
